May is the magic month of emerald green everywhere.  The trees are awake after their long winter sleep and feathered with new leaves while the grass is growing strong.

What could be better than carrying that beautiful color over to breakfast?  This quick and simple recipe of Green Eggs & Ham Breakfast Sandwiches is one even Dr. Seuss would love.

The theme of the Green Eggs & Ham recipe is, “Try something new.  You might like it.”

Do you remember reading Dr. Seuss books?  Imagine making them come alive for your children by creating this dish.  It will give a new and healthy meaning to “cooking the books” on a rainy day.

In the book Green Eggs and Ham Sam-I-Am is the main protagonist who is a short, unidentified creature that runs around after Joey pestering him to try a new food.  By the end of the story, Joey finally tries the repulsive food to get Sam-I-Am to leave him alone, and he finds he likes it.

According to research in Psychology Today, we fear an unknown outcome more than we do a known bad one.

“What if I don’t like that new dish?”  How often have you refused to eat something different, because you did not like the way it looked only to find it was delicious when you finally did taste it?

According to Behavior Research and Therapy, trying something new forces you to change and grow.

As creatures of habit, change can be daunting.  New can be a scary concept, because it may require thinking outside of the box.  But, without change, there cannot be progress.

Another theme in the book is to be sure the dishes you create have positive visual appeal.  According to research, we eat with our eyes and nose before we put anything in our mouth.   So make sure the dishes you serve have an attractive presentation.

COOKING TIP: Food coloring is available as an organic plant based product.

Ingredients for 1 Serving

1 English Muffin, sliced and toasted
2 eggs
Green food coloring
Chopped fresh parsley
1 slice of ham
2 slices of cheese
Salt and pepper to taste

Directions

Toast the English muffin slices.
Heat ham in pan or microwave.
Break eggs into a small bowl and beat while adding food coloring for desired color.
Scramble eggs as they cook in pan and add parsley.
Place slice of cheese on each side of the toasted English Muffin.
Add ham and scrambled egg.
Serve as a breakfast sandwich.

This recipe is perfect for holidays like Saint Patrick’s Day or Easter too.  Add a few chopped red peppers or pimentos, and it becomes a beautiful Christmas Morning Breakfast Sandwich.
